"What's New, What's Next" Apex and Epilogue from NY Design Center's InHouse Finishing Touches Cocktail Party

We are Co-Presenters at What’s New, What’s Next! InHouse showroom at NY Design Center: Interior Designer Toni Sabatino (L) & me, Finishing Touches author, Leeann Lavin 

Thank you for attending this year’s ninth annual What’s New, What’s Next!

And for spending your cocktail time with me, Toni, the InHouse Kitchen, Bath, Home team: Dave Burcher, Mary Erker, and Leah Gold; and Wood-Mode’s Jim - and John.

Our InHouse Finishing Touches presentation celebrated the pre-release of my book which presents classic and new cocktails with heart-stopping garnishes, especially “garden-to-glass” and other creative finishing touches, including candy, jewelry, and fire -- along with the drinks’ delicious food pairings that complement the provenance and natural ingredients of the craft cocktails and the tablescape or cocktail composition presentations -- a kind of genius loci or "spirit of the place."
It’s all about honoring quality ingredients and the presentation to add that special, finishing touch.

While my Finishing Touches book (FT) is chock full of history - kneeling at the bar of classic drinks and their garnishes, it also presents a new lifestyle approach that aims to bring cocktails to the next level.  It was a perfect coupling -- that Dave has an eye for strategic and creative alliances.
The book's theme played footsie or “romanced” the InHouse and sponsor Wood-Mode’s brand attributes of quality ingredients, bespoke craftsmanship, and stunning, glamorous beauty.

Leading up to the WNWN event and the InHouse cocktail party the InHouse team along with Toni and me, highlighted those shared value attributes in the talking points and presentation.
And so too with the food pairings made with artisanal ingredients.

Our rehearsal on the Tuesday prior to Thursday’s WNWN event was missing Toni because she was detained with family in Florida by that wench, Irma. While we did a bit of Facetime, covering key points together with the help of Dave, Mary, and Leah, who was managing changes to our Powerpoint presentation, it was nevertheless a test of our resilience.

We triumphed!




I think our brief, animated Finishing Touches talk (here for full presentation) captured the essence of the tie in and crossover elements including the art of composition, handcrafted ingredients, and creating a display that evokes personality and elegance.

Here, me, Toni, and Dave are running through our paces one last time before our guests arrive and Dave kicked off the event with a finishing touch welcome and a timely joke…

The images in my part of the talk highlighted how I created the cocktails and and came up with the food pairings and entertaining compositions to draw your eye - and your guests -- to a very happy hour!
I also included some tasty anecdotes and tall tales about classic garnishes and drinks.

To mark our Finishing Touches cocktail party, I chose two drinks from the book for their appropriateness to the event and to the season - and the ease of use to make.
Heart of Gold is a very glamorous cocktail with its gold-flaked, cinnamon-flavored liqueur (I was channelling autumn), artisanal ginger beer, cherry bitters


and a garnish of candied ginger affixed to the glass with a jewelry pin!






Sweater Weather is a Jessica Wohlers drink creation --- perfect for the season and so fitting for the sponsor and their cabinets! For the event, I created a custom garnish of knitting needles and colorful stitch holders!



The food pairings were plated on recyclable gold plates; cocktail napkins were monographed in gold lettering.
Food companions for Heart of Gold was inspired by my travels to Germany while attending school in Switzerland and informed by the cocktail’s Alpine liquor.

So pretzels and comfort-food Pigs-in-a-Blanket very much work. For the event, InHouse went top shelf, of course, and secured Martins Pretzels. These handmade pretzels fit perfectly into the quality ingredients we were showcasing at the Finishing Touches event. Plus the pretzels are my husband’s favorite for the same reasons…

artisanal pork or chicken ingredients wrapped in a flaky puff pastry!   Here, Jason is mixing up Heart of Gold for our guests.

The food pairing from the FT book for Sweater Weather is Figs garnished with goat cheese, walnuts, sea salt, basil, and balsamic vinegar, and honey.



All this attention to ingredients and details allowed Toni to expertly segue to Wood-Mode and Brookhaven:

Indeed, the day was truly exciting. And our event was a classy, swanky, fun, and delicious Finishing Touches cocktail party.

I was so happy my husband Bill was able to be there… And I was also overjoyed to see friends - some came all the way from the Garden State. Tom Sebazco - a contributing mixologist and artist took the time to attend - and walk all 15 flights up to the InHouse showroom because the elevators were all jam-packed!

Then, there was the incomparable artist, Bek Millhouse - who creates graphic art -- she did the icons for the book in production now, Eat with Your Eyes First, Artful Entertaining with Verrine Recipes, (You can Like us on Faceback-  and help provide feedback, please).  Bek also paints - she does watercolors - (I own a Bek watercolor of an Ecuadorian scene ) -- she does pencil art - check out her pet portraits -  and she is a photographer - to name a few of her talents. Besides being so much fun to be with.

Ultimate Cocktail Recipes & Food Pairings to Mark James Comey's Senate Testimony Media Viewing: Covfefe Cocktails!

No matter one’s politics - there’s no denying that today’s drama surrounding the the former director of the F.B.I., James B. Comey Testimony is a media event rivaling anything a former media star might have dreamed up. This is like a reality show - or a spy novel in the John le CarrĂ© tradition.

Adding to the serious gravitas this investigation deserves - there is an undeniable American entertainment spectacle that has blossomed around this surreal state of affairs of late.

I’ve read of D.C. bars that are offering special cocktails made with Russian vodka - and free cocktails every time the president tweets about the proceedings. Oh what a holy series of Lemony Snickets... Here’s a quote for you from just such a take on the Absurdity of the Human Experience:

“They didn’t understand it, but like so many unfortunate events in life, just because you don’t understand doesn’t mean it isn’t so.” or “The best way to keep a secret is to tell it to everyone you know, but pretend you are kidding.”

Kidding aside - I’m offering up a series of cocktails today - to help you embrace and remember this auspicious day in American history. We’ll get through this. Stay calm - and carry on. Wait - who says that?!

I’ll start with a few cocktails here - and update as the day unfolds. Covfefe Cocktail Cheers!

Heart of Gold

I chose this cocktail from my soon to be released cocktail book: Finishing Touches: The Art of Garnishing the Cocktail.

The gold glitter seems fitting for such a sparkly kind of media star event we’re witnessing. The pretzels can help keep you nourished! And the gold jewelry pin gilds the gold “star” quality of the garnish. Plus, if things get dodgy - that pin can come can come to a defense - or employed as a rapier!




Ingredients

2 jiggers Goldschlager - German Cinnamon Schnapps Liqueur

3-4 jiggers cold Ginger Beer - homemade or hand-crafted artisanal, such as Reed’s: sparkling, filtered water sweetened by a blend of cane sugar, pineapple juice, honey, fresh ginger root, lemon & lime juices and spices.

The cinnamon of the schnapps harmonizes with the spices in the ginger beer.

2-3 dashes Cherry Bitters - Fee Brothers

Method

Put ice cubes in goblet

Mix all ingredients in cocktail shaker

Remove ice from goblet. Pour strained cocktail into iced goblet glass.

Garnish with crystallized ginger - highlights ginger beer/ginger root ingredients (or maraschino or orange rind studded with cloves) clipped on with gold jewelry pins.

Can also pour cocktail into old-fashioned glasses with ice and garnish

Posh Pretzels & Piglets

Serve with classic cocktail party, German hot dog-inspired favorites: pigs in a blanket, artisanal pretzels and hearty mustard.


Galaxy Negroni Sbagliato

Keeping with the sparkly theme this morning, this negroni recipe includes edible silver glitter! I tasted this at the Negroni Week kickoff at Monday’s rooftop event and it is spectacularly delicious and refreshing. Imbibing during the testimony can bring a smile - albeit a tight one - but the sparkling water adds to a sense of celebration. After all, we live in a democracy where all this can take place.

1 oz. Campari

1 oz. Cinzano 1757

Cinzano Prosecco to top

Pour Campari and Cinzano 1757 over ice in a collins glass that has been sprayed with a chamomile tincture. Add 3 dashes of chamomile tincture and a pinch of edible silver glitter. Top with Prosecco.

Bloody Beef Stew
Tom Sebazco, Bartender/Entrepreneur, Fitzgerald’s Pub, NYC

Every morning event can be enhanced with a Bloody Mary -- or a Bull Shot.

Ingredients

2 ounce vodka, recommend a potato vodka: LiV, an artisan distilled craft vodka from Long Island, or for today: Russian vodka!

2 ounce tomato juice, preferably fresh-made from locally-grown tomatoes, cooked for 30 minutes, cool - seeds removed via food mill and blended.

Lemon juice (1/4 lemon)

Worcestershire sauce (dash)

Tabasco sauce (splash)

Salt (1/4 teaspoon or to taste)

Fresh cracked pepper (¼ teaspoon or to taste)

Method

Mix all ingredients in cocktail shaker, shake hard, pour over ice in 16 ounce pilsner glass - without curves.

Garnish

Salt rim on a pint/pilsner glass.

Float 1 ounce sirloin Au Jus on top of drink

Skewer cocktail pick with cooked sirloin beef chip; add on the same pick or additional cocktail pick: cut cubes of celery, baby carrots, pearl onion, baby potato and a lemon twist

Food Pairing & Cocktail Composition

Serve the muscular Bloody Beef Stew with potato latkes, Greek yogurt or sour cream, topped with caviar dollop along with a side serving topping of chunky, homemade applesauce & quince & apple or pear preserves with dried figs.

Serve mini or petite potatoes filled with creme fraiche and caviar.

Potato latkes can be secured from a local gourmet food store, a prepared mix or made from any number of recipes.

Make the serving-sized mini potatoes by boiling the potatoes until semi soft - approximately 8-10 minutes. Scoop out the centers. (Use in other recipes).

Using a pastry bag/pouch to fill the petite potatoes with piped creme fraiche. 
Top with dollop of caviar.

Serve the latkes and petite potatoes hot or cold, on silver trays. There is a plethora of faux silver party platters of all sizes available at local party store sources to add a touch of elegance to most every composition.

Bull Shot




Ingredients

(for one drink)
1/2 teaspoon Worcestershire sauce
1/8 teaspoon celery salt
Tomato balsamic sea salt from Keith Luce NoFo Kitchen - or local sea salt

Fresh, ground black pepper

2 dash Black Walnut Bitters

1/4 cup vodka
3/4 cup chilled double-rich, double-strength beef broth or beef bouillon

Method

Mix all ingredients together - shake. Pour over flavored ice cubes and serve in an old fashion glass. Bull Shots can be served hot in glass mugs, too.

Ice cubes - to make the seasoned ice cubes, puree celery, fennel, add Sazon - or spice of choice - with a few drops fresh lemon juice and seasoned salt - I used tomato salt. Freeze in cube trays.

Garnish

Lemon or lime wedge on edge of glass, with celery and fennel tops from the ice recipe.

2 pinch Sazon - Annatto Sazon dusted on top of drink

Food Pairing with Bullshot Brunch

Hard boiled eggs with a swoosh of Thai chili aioli.

Dust with Sazon spice powder -- Sazon is a mix of garlic, cumin, and has a slightly peppery with hint of nutty nutmeg taste.
Annatto and its “color of fire” was once used to control fevers, dysentery and kidney disease - so ideal for what ails you the morning after - or as a wake up drink.

Add a mint julep / love cup filled with fresh crudite: carrots, celery, peppers.

Melba toast points or blue corn chips offer a crunchy, somewhat salty, balance.




Cocktail Composition

The Bullshot and its decorative ice cubes make a handsome display, along with the colorful food pairings. Add some eye-catching straws and cocktail stirrers and napkins, plated with a variety of colorful peppers.

Thanksgiving Garden-to-Glass Cocktails using Homegrown, Seasonal Ingredients



This holiday the emphasis is on great food and drink. While the food often gets the spotlight - don’t get sidetracked by all the stuffing and gravy and miss out on creating a special, holiday-themed cocktail menu.

Here are a few of my favorites, with the emphasis on using lots of seasonal ingredients.

The Beverage Testing Institute awarded Strongbow the Best Tasting Common Cider about this time last year. I was fortunate enough to attend a tasting and dinner curated and prepared by oh-so-creative James Beard Foundation award-winning Chef Wylie Dufresne. Loved the lamb with barley, hibiscus-date and the Bay Leaf Ice Cream with brownie and Yuzu Fluff!

Strongbow has four cider flavors and each took home an award:
  • Gold Apple: gold medal, 92 points
  • Honey: gold medal, 92 points
  • Red Berries: silver medal, 88 points
  • Ginger: silver medal, 87 points


Hard Cider owns a very prominent place in American history - so what better way to celebrate Thanksgiving - this most American of holidays? And surely a drink that harkens to our colonists’ roots is needed to nurse our souls in this post-election sense of anxiety.

Gingerbread Sacrifice

Ingredients
1.3/4 oz Vodka
.33 oz Lemon Juice
3.1/2 oz Apple Cider
1.3/4 oz Orange Liqueur
A little Agave syrup
Gingerbread crumbs

Method
Rim a martini cocktail glass with agave syrup then roll in gingerbread biscuit crumbs. Pour 11/2 oz of lemon juice, 1 ¾ ozs of orange liqueur and vodka into a cocktail shaker with ice. Shake well and strain into the cocktail glass. Add 3.5 ozs of apple cider and stir.


More American roots cocktails

Here is another cocktail with a decidedly patriotic American history. I’m serving it as part of our Thanksgiving cocktails - not only because of its antecedent or pedigree, but also because the distillery is located near our Garden State home - and maybe most important :) I was inspired to create a cocktail and garnish for my soon-to-be-published book - Finishing Touches: The Art of Garnishing the Cocktail  (you can get in pre-sale!)  

Here is an excerpt I created and wrote for the cocktail and garnish book, along with suggested food pairing. 

For more than 300 years, the Laird family has produced AppleJack in Freehold, Monmouth County New Jersey - the Garden State since 1698. It is the holder of America's first commercial distillery with License #1. According to the company, Robert Laird - a descendent of founder Alexander - was a Revolutionary War soldier serving under George Washington, and the Laird family supplied the troops with Applejack. Historical records show that, prior to 1760, George Washington wrote to the Laird family requesting their recipe for producing Applejack, which the Laird family gladly supplied. Entries appear in Washington’s diary in the 1760s regarding his production of "cyder spirits."


I Cannot Tell A Lie

Ingredients:
2 jiggers Lairds AppleJack brandy
1 jigger caramel simple syrup
4 jiggers crisp apple sparkling water
4 shakes Fee Brothers Aztec Chocolate Bitters 

Method
Mix all ingredients in a cocktail shaker. Pour over rocks in tall highball glass. Garnish with apple slice and cinnamon stick.



Food Pairing and Cocktail Composition
Serve with Quaker Rice Crisps Caramel Corn cups filled with fresh, homegrown apple butter. Add Godiva salted caramel chocolates (or other high-quality chocolates), sliced apples (rubbed with lemon to prevent yellowing), and sprinkled with cinnamon. The tasty treats echo the apple, caramel, and chocolate flavors swizzling in the drink.

Highlight the cocktail’s rustic, Americana roots. Feature the snacks on a wooden cutting board, sprinkle Cracker Jacks caramel coated popcorn and peanuts around the presentation; add apples - in various colors: red, greens - and various sizes, including those adorable Lady Apples. Some apples can be used as candle holders for an “honest” glow.

Toss in a Jacks & Balls (game) for a whimsical tablescape decor touch. Provide festive red and white straws to help spark an “honest” cocktail conversation!

While not American, this hard cider is undoubtedly delicious. And with all “honesty” our colonist ancestors had to learn their cider crafting somewhere - bringing over skills from their homelands and their ancestors.
Rekorderlig is a premium hard cider brand born and brewed in Sweden. I was fortunate to attend a few  taste-testing opportunity recently.  The cider is delicious served over ice with fresh fruit garnishes or mixed into cocktails, Rekorderlig is available in five flavors:
  • Pear 
  • Strawberry-Lime 
  • Wild Berries 
  • Passionfruit 
  • Spiced Apple.
Rekorderlig Spiced Apple Hard Cider is $4.99 for 16.9 ounce bottle. The company claims it is the only cider on the market that can be enjoyed either hot or cold; the product is a beautiful blend of fresh, effervescent apple cider infused with vanilla and warming cinnamon.


Hot Swede

Ingredients:
1 oz spiced rum
1 tbs honey - local is best
¼ lemon (squeezed) 
1 cinnamon stick
Half a bottle of hot Spiced Apple Hard Cider

Method:
Mix the rum, honey, and lemon together; Add hot Rekordlig and stir. Serve with a cinnamon stick and an orange wheel.


The Pear Jam

Ingredients:
1 oz Ford’s Gin
.75 oz lime

Method:
Muddle 1 Sprig Fresh Mint
Shake and strain into glass
Top with Rekorderlig Pear Cider
Garnish with Fresh Mint



Another spirit with lots of history that has recently experienced a resurgence is the small batch distilleries in New York, particilarly in the Hudson Valley. In fact, the number of craft distilleries increased by more than 25 percent in just one year (from 2014 to 2015) up to nearly 80. (Thanks, Governor Cuomo!)
I love Hudson Whiskey, the first legal pot-stilled whiskey distilled in New York state since prohibition, who sources 90% of its grains from within 40 miles of the distillery.

The distillery notes in a press release sent to me recently, “For the first time ever the Maple Cask Rye is available in 750ml bottles in addition to the well-known 375ml apothecary-style bottles. This Hudson Whiskey variant is the result of a partnership with Wood’s Syrup maple tappers who use Hudson Whiskey barrels to age their syrup then returns them to the distillery to finish off the Maple Cask Rye and impart a subtle maple sweetness into the classic whiskey. The Maple Cask Rye will have a recommended retail price of $54.99 and will join Hudson Whiskey’s signature Baby Bourbon, Manhattan Rye and New York Corn variants in larger size bottles, affirming the industry and consumer demand for Hudson Whiskey’s award-winning spirits.

“With Hudson, we set out to make great whiskey in New York again,” said Hudson Whiskey co-founder and craft distilling pioneer Ralph Erenzo. “With the investment from William Grant & Sons, we’ve been able to expand our production to support increased demand without ever cutting corners. Maple Old Fashioned

Ingredients:
2 parts Hudson Maple Cask Rye
Teaspoon good maple syrup
3-4 dashes (to taste) aromatic bitters
Garnish: apple slice and cinnamon stick

Method:

To an Old Fashioned glass, add maple syrup, then bitters, then ice, followed by the Hudson Maple Cask Rye. Stir well to mix and chill. Add garnish and serve.


Fall Back

Ingredients:

2 parts Hudson Maple Cask Rye
1⁄4 part fresh lemon juice
1⁄4 part maple syrup
2 parts apple cider
Cayenne pepper

Method:

To an Old Fashioned/rocks glass, add ice, then lemon juice, then maple syrup, then whiskey, then apple cider, and stir briefly to mix. Add dash cayenne pepper on top, and serve with straw.

Delicious drinks made with one of my most favorite mixers: Q Drinks,


Dark, Stormy & Cidery

Ingredients:

3 oz chilled Q Ginger Beer
2 oz dark rum,
½ oz fresh lime juice
1 oz chilled apple cider
1 apple slice
1 lime wedge

Method:

Fill a cocktail shaker with ice. Add the rum and lime juice and shake well. Pour the Q Ginger Beer into an ice-filled collins glass and then top with apple cider and then the shaken rum. Garnish with an apple slide and a lime wedge. Try to balance the lime wedge on the apple slice like a sinking ship. It gets easier on the third drink.


Sailor Jerry Apple Ginger Punch

Ingredients:
1 ½ parts Sailor Jerry Spiced Rum
2 parts sour mix
1 part apple juice
1 part ginger syrup
Pinch of ground cinnamon

Method:

Add ingredients into mixing glass, add ice, shake, strain over ice into a rocks glass and garnish with an apple slice and a sprinkle of ground cinnamon.

Sailor Jerry Spiced Rum is a Caribbean Rum blended with 100% natural spices and flavors.



Reyka Snap Mulled Cider

Ingredients:
1 ½ parts Reyka Vodka
¾ part Snap Liqueur
3 parts Apple Cider

Method:

Combine all ingredients into a cocktail shaker. Shake, strain into wine glass or mug and garnish with candied ginger on a skewer.

Reyka Vodka is an Icelandic born vodka and provides a smooth and crisp base for both complex and simple cocktails.


Drambuie’s Prince Pum King

Ingredients:

1 part Drambuie
1 ½ parts Pumpkin Puree
1/8 tsp Ground Cinnamon
1/8 tsp Ground Nutmeg
4 parts Steamed Whole Milk (Or choice milk-base)

Method:

Steam milk, pumpkin puree and spices together until hot. Double-strain into cup. Stir in Drambuie. Serve in Irish Coffee Mug
Garnish with steamed milk foam and freshly ground nutmeg dusted on top.


Apples & Honey


Ingredients:

1 ¼ parts Drambuie
2 parts Kosher Pressed Apple Cider
¾ part Lime Juice
1 sm pinch Kosher Salt
1 dash Angostura Bitters
1 part Kosher Sparkling White Wine (For dryer Cocktail 2 parts Sparkling wine)

Method:

Combine liquid ingredients and salt minus wine into a cocktail shaker with ice. Shake and stain over ice in a rocks glass. Top with Sparkling wine and garnish with thinly apple slices and mint.

Drambuie is made from a delightful combination of scotch whisky, heather honey, herbs and spices. This cocktail created by Drambuie Brand Ambassador Vance Henderson.
