Kosaka is an elegant restaurant, revered not only for its food, but for its art program, curated by EunYoung - the extraordinary horticulture talent, who I’ve had the honor of working with -- in New York, in New Jersey and in Ecuador - at Hacienda Cusin - where she introduced the gardeners there in the edible garden to microgreens.
